Set against Bedrock Origin's intimate coastal setting, guests are invited on a journey through carefully paired dishes that highlight the character, complexity, and elegance of each wine, culminating in an evening designed for discerning diners and wine enthusiasts alike.

The Highlights
This one-night-only experience presents a five-course dinner paired with a selection of esteemed Bordeaux wines, including Saint-Émilion de Quintus, Le Dragon de Quintus, Château Quintus, and Le Clarte de Haut Brion Blanc.
Available exclusively to KrisFlyer members, the evening begins with a refreshing amuse-bouche of tuna, avocado, and wasabi sauce, paired with a bright sparkling rosé to awaken the palate and set the tone for the courses ahead.
The first course features 7-Day Dry-Aged Red Snapper, complemented by grilled sweet corn, fermented red onion, and miso citrus sauce. Its delicate sweetness and umami notes are elevated by Le Clarte de Haut Brion Blanc 2019, a refined white Bordeaux known for its freshness and complexity.
Next, Smoked Duck Breast is paired with spinach purée, shimeji mushroom, and balsamic reduction. The dish's rich, savoury profile finds balance in Saint-Émilion de Quintus 2021, whose vibrant fruit character and elegance complement the duck beautifully.
The journey continues with Roasted Pork Belly, accompanied by brandied cherry, apple rémoulade, and molasses glaze. Paired with Le Dragon de Quintus 2019, the course brings together sweet, savoury, and gently spiced flavours that echo the wine's depth and generosity.
For the main course, Applewood Grilled Tenderloin is served with fondant potato, beef fat garlic and red wine sauce. Guests will enjoy a comparative tasting of Château Quintus 2015 and Château Quintus 2019 alongside the dish, offering a unique opportunity to explore the nuances of vintage variation and the evolution of this acclaimed Saint-Émilion estate.
The experience concludes with a Salted Caramel Chocolate Lava Cake served with vanilla ice cream, providing a warm and indulgent finale to the evening.
