The Highlights
Begin with the elegant Wagyu Tartare, a refined opening that sets the tone for what is to come. This is followed by a deeply comforting Wagyu Soup, featuring Short Horn A Grade Wagyu, Himi Udon, and Japanese turnip, a bowl that speaks to the warmth and soul of Japanese cuisine.
The journey continues with the delicate Wagyu Tataki, before arriving at the evening's most anticipated moment, the Binchotan Grilled Wagyu, kissed by the heat of Japanese charcoal and finished with wasabi, bonito soy sauce, and sea salt. Each element considered, each bite deliberate.
A deeply satisfying Wagyu Sukiyaki Don follows, Short Horn A Grade Wagyu, Kansai Style Sukiyaki, diced tomato, and chopped truffle, coming together in a bowl that is as indulgent as it is comforting. The experience concludes with the Matcha Fondant, a luxurious, quietly poetic finale to a masterfully crafted journey.
