The Experience

At the age of 33, 2 Michelin-starred chef Jeroen Achtien has emerged as a culinary prodigy and has been dubbed one of the most exciting chefs of his generation. As the head of culinary at the iconic Vitznauerhof in Switzerland, Jeroen has truly reinvented the art of dining.

His experimentation with fermenting and its complexities has led him to create some exquisite and perfectly balanced flavours. While many chefs like simplicity in their dishes with 2 or 3 items, Jeroen’s goal is to combine 7 or 8 ingredients in perfect harmony.

The Highlights

Jeroen hopes that Singapore will experience flavours never tasted before throughout this menu. His biggest highlight will be to combine classic techniques to create completely different flavours. He wants guests to experience his signature pike perch aged with his homemade koji.
